Pumpkin Hummus with Cinnamon Sugar Baked Pita Chips

pumpkin-hummusFootball is back and so is pumpkin season! Personally pumpkin flavor is my favorite so I am always looking for ways to add it in different recipes.  While you’re watching the first Patriots home game tomorrow night, surprise your family or friends with this delicious and healthy (shhh don’t tell the kids it’s healthy) snack to munch on during the game… or any occasion this fall!

Pumpkin Hummus

Ingredients:

1 15 oz can chickpeas

1 15 oz can pure pumpkin

2 tbsp extra virgin olive oil

2 tsp minced garlic

1 lemon

1 pinch of dried parsley

Directions: Simply put all of the ingredients into a food processor or blender and combine until smooth!

Of course you need something to eat the Hummus with; I came across a Cinnamon Sugar Baked Pita Chip recipe that will go perfect with the Pumpkin Hummus.

Cinnamon Sugar Baked Pita Chips

Ingredients:

About 4 whole wheat or multigrain pitas, cut into triangles or maybe even a football shape.

2 tbsp extra virgin olive oil

1 tsp ground cinnamon

1 tbsp white sugar

Directions

1)      Preheat oven to 350 degrees

2)      In a small bowl, combine the cinnamon and sugar

3)      Cut the pitas in the shape of your choice

4)      Lay pitas on a baking sheet and brush the olive oil over each pita.

5)      Dust the pitas with the cinnamon and sugar mixture

6)      Bake for 10-12 minutes or until the pitas look golden
