Snacks for National Fruit and Veggie Month
June is marked as National Fruit and Vegetables Month. This seems appropriate since many of us try to eat healthier during the summer months. However, the cookouts and summer parties sometimes make it hard to eat healthier. Here are two recipes that include fruits and vegetables for you to bring to your next cookout to help yourself and others get their intake of fruits and veggies this summer!
Fresh Fruit Bread
• ¾ cup butter
• 1 ¼ cups sugar
• 3 eggs
• 8 ounces sour cream
• 1 teaspoon vanilla
• 3 cups flour
• ¾ teaspoon baking powder
• ½ teaspoon baking soda
• ¾ teaspoon salt
• ½ teaspoon cinnamon
• 2 cups coarsely chopped strawberries or 2 cups blueberries or 2 cups peaches.
Cream the butter and sugar then add eggs, sour cream and vanilla.
In another bowl mix the flour baking powder, baking soda, salt, cinnamon and add to the above mixture.
Carefully add in the fruit of your choice. Pour mixture into two bread pans and bake at 350 for one hour.
Take the bread out of the oven and let cool for 10 min. Enjoy!
Fresh Vegetable Dip
Combine all ingredients into a bowl, chill for 1 hour and serve with fresh veggies. Yes..it’s that easy!
